Tomorrow we celebrate Independence Day! Hopefully you will enjoy a fun, relaxing day with friends and family. And what’s the Fourth of July without food?
We’re planning to grill out with some friends before watching the city fireworks. So here are a few easy fourth of July recipes that you could whip up by tomorrow without breaking a sweat (unless it’s nearly 100 degrees like it is here in Alabama, phew!).
And here is my own Pasta Salad Recipe that’s a Summer staple for picnics and gatherings of all kinds!
Pasta Salad Recipe:
Ingredients:
Box of Rotini Pasta (I like to get the multi-colored kind, because it makes the salad pretty)
Can of olives
Can of diced tomatoes (you could also use canned stewed tomatoes if you like the bigger chunks)
Parmesan cheese
Italian Dressing
Directions:
Cook pasta according to the package directions and drain. Drain the liquid from the olives and tomatoes. In a large bowl combine the pasta, olives, tomatoes, and as much parmesan cheese and italian dressing as you like. I have found that the secret is lots of cheese and dressing…I always get compliments that the salad has a lot of flavor when usually they think pasta salad is a little bland. You can also add more olives and tomatoes if you like depending on how much “stuff” you like in your pasta salad.
